Smoothies & Sundresses

This past week, I haven’t been able to get down much solid food. I’m not sick; I just have what could be the worst canker of my entire life. Enough said… no need to get graphic about it.

So chewing has been more or less out of the question since Sunday. Oatmeal, soup and my new smoothie concoction have been getting me through pretty well though, considering. I’m not usually a big smoothie drinker even though I love them. I’ve found that many tend to run high in calories and fat and I’ve become the type of person who would rather eat my calories than drink them.

But this recipe has 4 ingredients, and the nutritional stats are terrific in my opinion. It’s as easy as dumping them into your blender, letting it whiz for a minute and enjoying the frothy goodness that reminds me of tropical Caribbean vacations. You may get hooked – don’t say I didn’t warn you.

Nutrition-wise, I figured out that using these measurements makes just around 16 ounces which fits perfectly in the Starbucks cup (complete with a Christmas straw.) I calcuate around 250 calories, no fat and around 20 grams of protein per serving. For a light lunch, mid-afternoon snack, or when you can’t fathom chewing real food, I consider it a huge win.

Also, I realized that my sundress and my smoothie go together today. I paired the dress with my favorite leather jacket and sparkly gold flats, even though I desperately need a tan. I think my friend Emily would approve. (She’s my fashion guru friend. Check out her blog.)

Pineapple-Mango Smoothie

3/4 cup frozen pineapple chunks
3/4 cup frozen mango chunks
3/4 cup nonfat vanilla Greek yogurt (I have a new obsession with Dannon’s Light & Fit Greek)
1/2 cup skim milk

Combine all ingredients in a blender and blend on high until smooth. Pour into your favorite glass and enjoy!
